White Wine · Histamine-Certified

White Wine · Histamine-Certified

In this category you will find white wines for which a specific, concrete histamine analysis from a recognised wine laboratory is available.

Why “Histamine-Certified” Instead of “Histamine-Free” White Wine?

For wine as an alcoholic beverage, the term “histamine-free” may not be used for legal reasons. The declaration of a specific histamine value on wine labels is also not permitted – even if a laboratory analysis is available.

You will find the respective analysis values transparently listed with each white wine. Further information on our histamine-certified wines is available here.

Histamine in White Wine – Yes or No?

Histamines occur naturally in many foods and beverages. Wine can also contain histamine, as it may develop during fermentation and ageing.

When producing our white wines, we already focus on particularly gentle processing during vinification. Nevertheless, individual wines may still develop histamine. These wines are left unchanged and are not offered as histamine-certified white wines.

Selection + Taste of Histamine-Certified White Wines

In this category you will find all white wines from our winery for which a specific histamine analysis is available. The selection of histamine-certified white wines varies depending on vintage and grape variety.

Whether a white wine is made dry or sweet has no influence on its histamine content.

Details on sweetness, aroma and vinification can be found in the individual wine descriptions.

Flavour Styles of Histamine-Certified White Wines

  • Dry: no or hardly perceptible sweetness
  • Off-dry: very subtle sweetness
  • Semi-sweet: light, pleasant sweetness, residual sugar up to max. 45 g/l
  • Sweet: pronounced sweetness, residual sugar from 45 g/l
  • Noble sweetness: very pronounced sweetness from highly ripe grapes in dessert wines

Grape Varieties for Histamine-Certified White Wines

Based on our experience, whether histamine develops in white wine or not is not dependent on the grape variety. We are therefore pleased to offer you a wide range of flavours made from various classic and rarely cultivated grape varieties.

Enjoying Histamine-Certified White Wines

Histamine-certified white wines are just as versatile to enjoy as other white wines. They are suitable as companions to food, for social occasions, or for mindful enjoyment in everyday life.

Dry Histamine-Certified White Wines

These white wines are particularly versatile food companions. They pair well with meat and poultry dishes, fish and seafood, pasta and vegetarian cuisine, Asian dishes, and also with cold meals.

Off-Dry Histamine-Certified White Wines

These white wines are also well suited as companions to food. Compared to dry wines, they have a touch of subtle residual sweetness and pair with the same dishes.

Semi-Sweet + Sweet Histamine-Certified White Wines

These white wines appeal to those who prefer wines that are not completely dry. They are true wines for enjoyment, ideal for sociable evenings or whenever you wish to treat yourself. Sweet white wines also pair well with food – try them with aromatic or sweet-and-sour dishes.

Histamine-Certified Dessert Wines

Made from particularly ripe grapes, dessert wines represent the top qualities of any vintage. Their taste is dense and expressive. As their name suggests, dessert wines pair especially well with desserts and sweet dishes, but also with savoury pâtés, and they are excellent as an aperitif.

Quality and Transparency

All histamine-certified white wines are analysed separately at each bottling. The respective analysis values are shown transparently for each individual wine.

The designation “histamine-certified” stands for verifiable, concrete analytical data from our wine laboratory.

In addition, the histamine-certified white wines undergo the official quality wine inspection by the Chamber of Agriculture and, after successfully passing this examination, may bear the designation “German Quality Wine” or “German Prädikat Wine”.

Histamine-Certified Tasting Packs

In addition to individual wines, we have put together three tasting packs with six different wines each. These allow you to get to know and compare different wines.

  • Dry histamine-certified wines
  • Off-dry histamine-certified wines
  • Sweet histamine-certified wines

The tasting packs are shipped free of charge within Germany.

FAQ – Frequently Asked Questions about Histamine-Certified White Wines

Which white wine has the lowest histamine level?

Most white wines in this category are below 0.1 mg/l, many significantly lower. For wines showing an analysis result of < 0.01 mg/l, the histamine level is below the laboratory’s detection limit. The exact value is listed for each wine.

Are certain white grape varieties naturally lower in histamine?

Histamine content is not a fixed characteristic of a grape variety and may vary depending on vintage and bottling.

Is the stated histamine value vintage-specific?

Yes. The declared histamine level always refers to the specific bottling offered. Each bottling is analysed separately for its histamine content.

Why do histamine levels differ between individual white wines?

Histamine content is an analytical measurement and may vary depending on grape variety, vintage and bottling. Therefore, the values are listed individually for each product rather than applied uniformly to all white wines.

Do histamine-certified white wines taste different?

No. Taste, style and aromatic profile correspond to the respective grape variety and winemaking approach. The histamine testing concerns the analysis only – not the production process or the character of the wine.

Are histamine-certified white wines specially treated?

No. Histamine-certified white wines are produced in the usual way. Nothing is removed or technically altered afterwards. The only difference is that the histamine level is analytically measured and transparently stated.

Are there alcohol-free histamine-certified white wines?

Yes. We also offer an alcohol-free histamine-certified white wine: Sauvignon Blanc «Zero».

Who performs the histamine analyses?

The analyses are carried out by a recognised wine laboratory. The measured value is displayed on the product page, and the full analysis is available for download.
