Dry White Wines – How Do Dry and Off-Dry Differ?

Dry White Wines
Dry white wines contain no or hardly any sweetness, as during fermentation the natural sugars in the grapes are converted into alcohol. These non-sweet wines are also often described in German as “herb”. Dry white wines are classic companions with food.
Off-Dry White Wines
A hint of subtle residual sweetness characterises off-dry white wines. They do not taste sweet, but are simply not quite as bone-dry as dry white wines.
Under German wine law, dry wines may contain a maximum of 9 g/l of residual sugar; off-dry wines lie correspondingly above this level.

What Do Dry and Off-Dry White Wines Taste Like?
The aromatics of dry and off-dry white wines depend on the individual grape variety, which differ from one another in fruit character and style of bouquet.
- Delicately Fruity White Wines
These include Riesling, Silvaner and the white Burgundy varieties. All of them show rather restrained, subtle aromatics. - White Wines with an Intense Bouquet
Sauvignon Blanc and Moscato Giallo are white wines with a pronounced bouquet and particularly expressive aromatics.
Depending on the grape variety, white wines display differing degrees of fruitiness and aromatic flavours. The colour also varies by variety: the spectrum ranges from pale yellow-green to rich golden yellow.
On the palate, fruity notes of apple, pear, pineapple, apricot, peach or citrus fruits may appear, as well as mango and lychee. In addition, white wines can show floral, herbal, peppery and muscat-like aromas.
Dry White Wines with Delicate Fruitiness or with an Intense Bouquet
Most of our dry white wines are delicately fruity in style. The fine flavours of these grape varieties remain subtle on the palate.
Exceptions are Moscato Giallo and Sauvignon Blanc, whose pronounced bouquet harmonises particularly well with the subtle sweetness found in off-dry styles.

Dry white wines are most often enjoyed with food and are exceptionally versatile companions for a wide range of dishes.
The wines should be well chilled to underline their fresh character.
A large, generously shaped wine glass allows the aromatics to unfold in the glass, even with gentle swirling.
Dry White Wines – Classic Partners with Food
Dry, non-sweet white wines pair well with many dishes, particularly fish and seafood, poultry, and light veal or pork. They accompany vegetarian dishes, pasta and Asian cuisine, and combine beautifully with a cold supper of bread and cured meats, ham or cheese.

Which Grape Varieties Are Used for Dry White Wines?
In principle, all white grape varieties are suitable for producing dry white wines. The only requirement is that the must ferments fully and no natural residual sweetness remains in the young wine.
Classic and Rare Grape Varieties for Dry and Off-Dry White Wines
Alongside classic grape varieties, we also vinify a genuine rarity as an off-dry white wine: Moscato Giallo. Considered the most refined of the Muscat family and cultivated only very rarely, it offers a truly distinctive tasting experience.
We also produce dry and off-dry white wines from the following grape varieties:
- Chardonnay, a delicately fruity member of the historic Burgundy family,
- Pinot Gris, an old variety with distinctive character,
- Green Silvaner, a grape variety with a long tradition, producing delicately fruity wines,
- Riesling, a racy, fruity white wine from Germany’s best-known grape variety,
- Sauvignon Blanc, an aromatic white wine whose cultivation here has only been permitted since 2001,
- Pinot Blanc, a classically delicately fruity white wine.

Dry and Off-Dry White Wines – Quality You Can Taste
Our dry white wines are German quality wines, cultivated, vinified, matured and bottled by us with great care:
- from healthy, very ripe grapes
- gently pressed with minimal pressure
- only crystal-clear filtered must is fermented
- slow, temperature-controlled fermentation at low temperatures
- extended ageing on the lees to develop aromatics
Quality Assurance and Control
The quality of a white wine is independent of whether it is dry or sweet. In dry wines, all natural sugars from the grape must are fermented into alcohol, while off-dry white wines retain a small amount of residual sweetness.
Certified Quality
- Only faultless dry and off-dry white wines with varietal character are bottled.
- After the mandatory laboratory analysis, the wines are submitted to the official quality wine examination conducted by the Chamber of Agriculture.
- The designation “German Quality Wine” may only be used after successfully passing this quality assessment.

Are dry white wines always high in acidity?
