In this category you will find red wines for which a specific, concrete histamine analysis from a recognised wine laboratory is available.

Why “Histamine-Certified” Instead of “Histamine-Free” Red Wine?

For wine as an alcoholic beverage, the term “histamine-free” may not be used for legal reasons. The declaration of a specific histamine value on wine labels is also not permitted – even if a laboratory analysis is available.

You will find the respective analysis values transparently listed with each red wine. Further information on our histamine-certified wines is available here.

Histamine in Red Wine – Yes or No?

Histamines occur naturally in many foods and beverages. Wine can also contain histamine, as it may develop during fermentation and ageing.

With our red wines, we already focus on particularly gentle handling during grape growing and vinification. Nevertheless, individual wines may still develop histamine. These wines remain unchanged and are not offered as histamine-certified red wines.

Selection + Flavour Profile of Histamine-Certified Red Wines

In this category you will find all red wines from our winery for which a specific histamine analysis is available. The selection of histamine-certified red wines varies depending on vintage and grape variety.

The aromatic profile of the red wines ranges from fruity to powerful and tannin-driven, while the colour spans from bright ruby red to very dark, almost black hues.

Whether a red wine is vinified dry or sweet has no influence on its histamine content.

Details on sweetness, aromatics and vinification can be found in the individual wine descriptions.

Flavour Styles of Histamine-Certified Red Wines

  • Dry: no perceptible or only very little sweetness
  • Off-dry: very subtle sweetness
  • Semi-sweet: light, pleasant sweetness, residual sugar up to max. 45 g/l
  • Sweet: clearly perceptible sweetness, residual sugar from 45 g/l
  • Wine of noble sweetness: very pronounced sweetness from highly ripe grapes in dessert wines

Based on our experience, the development or non-development of histamine in red wine is not dependent on the grape variety. We are therefore pleased to offer you a wide range of flavours made from various classic and rarely cultivated grape varieties.

Histamine-certified red wines are just as versatile to enjoy as other reds. Whether as food companions, for social occasions or for mindful enjoyment in everyday life, they offer great diversity of flavour.

Dry + Off-Dry Histamine-Certified Red Wines

These wines are particularly versatile food companions. They pair well with meat dishes such as beef or lamb, with game and game birds, with Mediterranean cuisine, and also with a cold evening meal.

Semi-Sweet + Sweet Histamine-Certified Red Wines

These wines appeal to those who prefer reds that are not completely dry. They are genuine wines for enjoyment on convivial evenings, or whenever you wish to treat yourself. Sweet red wines also pair well with food: try them with spicy grilled dishes and other flavour-intense meat dishes.

Histamine-Certified Red Dessert Wines

Made from particularly ripe grapes, dessert wines represent the top qualities of any vintage. Their flavour is dense and expressive. As their name suggests, dessert wines go especially well with desserts and sweet dishes, taste excellent as an apéritif, and are wonderful stand-alone drinks when you feel like indulging.

Quality and Transparency

All histamine-certified red wines are analysed separately with each bottling. You will find the respective analysis values transparently listed with each individual wine.

The designation “histamine-certified” stands for verifiable, concrete analytical data from our wine laboratory.

In addition, the histamine-certified red wines undergo the official quality wine examination by the Chamber of Agriculture and, after passing this examination, may bear the designation “German Quality Wine”.

Which red wine has the lowest histamine level?

Most red wines in this category are below 0.1 mg/l, many significantly lower. For wines showing an analysis result of < 0.01 mg/l, the histamine level is below the laboratory’s detection limit. The exact value is listed for each wine.

Are certain red grape varieties naturally lower in histamine?

Histamine content is not a fixed characteristic of a grape variety and may vary depending on vintage and bottling.

Is the stated histamine value vintage-specific?

Yes. The declared histamine level always refers to the specific bottling offered. Each bottling is analysed separately for its histamine content.

Why do histamine levels differ between individual red wines?

Histamine content is an analytical measurement and may vary depending on grape variety, vintage and bottling. Therefore, the values are listed individually for each product rather than applied uniformly to all red wines.

Do histamine-certified red wines taste different?

No. Taste, structure and style correspond to the respective grape variety and winemaking approach. The histamine testing concerns the analysis only – not the production process or the character of the wine.

Are histamine-certified red wines specially treated?

No. Histamine-certified red wines are produced in the usual way. Nothing is removed or technically altered afterwards. The only difference is that the histamine level is analytically measured and transparently stated.

Who performs the histamine analyses?

The analyses are carried out by a recognised wine laboratory. The measured value is displayed on the product page, and the full analysis is available for download.
