White wines of noble sweetness represent the highest quality levels among white wines; they are produced from extremely ripe grapes. Due to their long ripening period, the grapes achieve very high must weights, while the berries partially dry on the vine in a raisin-like manner and are naturally concentrated by the sun.
Such highly ripe wines cannot be harvested every year; they require an exceptionally long ripening period, for which all weather conditions throughout the season must align perfectly.

White wines of noble sweetness are noticeably denser and far more intense in flavour than the lighter semi-sweet and sweet white wines. Their sweetness is often significantly more pronounced.

How Do White Wines of Noble Sweetness Taste?
These white wines share a remarkable density and intense sweetness, which underline the expressive flavours of their respective grape varieties. The wines are full-bodied, harmonious and elegant, with an exceptionally long finish on the palate.
Depending on the grape variety, the aromatics of these dessert wines vary considerably. The Huxelrebe offers a wealth of exotic fruit aromas, while the Siegerrebe shows a distinctly grapey character with a spicy Muscat note.
The colour nuances of these wines are predominantly found in golden-yellow tones.

With dessert white wines, food can be enjoyed alongside them, but it is by no means essential. They are equally suitable as an apéritif for a fine menu or as an intermediate course.
True to their name, these wines do not only pair well with desserts, pastries and sweet dishes: they are also wonderful companions to poultry liver pâtés and match particularly well with fine blue cheeses such as Roquefort or with intensely flavoured, mature hard cheeses.

Which Grape Varieties are Used for White Wines of Noble Sweetness?
Not all white grape varieties are suitable for wines of noble sweetness. The vines must be capable of achieving the very high must weights required; varieties such as Mueller-Thurgau, for example, can only do so in exceptional cases.
Early budbreak favours a long growing and ripening period for the grapes. In addition to the grape variety itself, the vineyard site also plays a decisive role.

Bouquet Grape Varieties for White Wines of Noble Sweetness
We currently offer dessert white wines made from three bouquet grape varieties. Owing to their aromatic intensity, these wines are particularly well suited to wines of noble sweetness:
- Huxel, a very fruity and only rarely cultivated white grape variety,
- Siegerrebe, a rarely grown white grape variety with pronounced spice,
- Ortega, a fruity rarity capable of achieving very high levels of ripeness.

Our white wines of noble sweetness are German quality wines with special distinction, which we cultivate, vinify, mature and bottle with great care:
- from healthy, very ripe grapes
- gently pressed using minimal pressure
- only crystal-clear must is fermented
- slow, temperature-controlled fermentation at low temperatures
- extended lees ageing to develop aromatic complexity
