Grape Variety Sauvignon Blanc – Herbaceous Aromatics and Fresh Fruit

Sauvignon Blanc is a white grape variety of French origin that is still comparatively rarely grown in Germany. It is characterised by herbaceous notes and fresh fruit, which can appear more or less pronounced depending on harvest timing and style of vinification.

An extensive tasting of different Sauvignon Blanc wines prompted us to work with this demanding grape variety ourselves. As soon as a suitable site became available, we planted it in the Zellertal.

Two Wine Styles – One Grape Variety

As we are not particularly fond of the “dry-only” approach, especially with aromatic grape varieties such as Sauvignon Blanc, we vinify it in two different styles:

  • Sauvignon Blanc off-dry, with a subtle touch of sweetness, belongs to wines that are not fully dry but by no means sweet. The gentle sweetness supports the expressive aromatics of Sauvignon Blanc.
  • A Sauvignon Blanc with a more pronounced residual sweetness can be found among our sweet white wines. Here, sweetness and aromatics complement each other in a very harmonious way.

Sauvignon Blanc wines pair particularly well with fish and seafood, poultry, light meat dishes and cheese.

Sauvignon Blanc Sites at Weingut Fuchs

Our Sauvignon Blanc vines grow in selected south-facing sites in the Zellertal, between Mölsheim and Zell, in the Palatinate.

The challenging, stony yet highly mineral soils of the Zellertal favour the development of aromatics, but initially made establishment difficult for the young vines. They required time to root deeply and fully establish themselves. Since 2012, the vineyards have been producing regular yields that can be vinified as a distinct Sauvignon Blanc.

Sauvignon Blanc is one of the oldest known white grape varieties in Europe. Its cultivation can be traced back as far as 280 AD, and it spread across Europe from the Bordeaux region.

Today, Sauvignon Blanc is grown worldwide and vinified in a wide range of styles, from dry to off-dry or sweet.

Characteristics of the Variety

Sauvignon Blanc places high demands on climate and site. To reach full grape ripeness, the variety requires sufficient warmth as well as a long growing season that allows for reliable cane ripening.

The grape bunches are small and compact, with berries that reach only moderate size and ripen late. When fully ripe, they produce aromatic white wines with characteristic herbaceous notes and fresh fruit.
