Cabernet Mitos – Depth, Colour and Structure

Cabernet Mitos is a modern red grape variety valued for its intense colour, dense structure and pronounced tannins. Aromatically, it recalls classic Cabernet varieties, while showing a distinctive, powerful style of its own.

We deliberately do not bottle Cabernet Mitos as a single-varietal wine, but instead use it selectively as a structural component in some red wine cuvées, which you will find among our dry red wines. Combined with fruity red varieties, Cabernet Mitos contributes depth, dark fruit, structure and backbone – qualities that give a cuvée stability and expression – while the other blending partners provide the fruity notes.

Red wine cuvées with a high proportion of Cabernet Mitos are characterised by their density and a velvety yet powerful style with clearly perceptible tannins. The wines are deeply coloured and show a distinct Cabernet character. They pair particularly well with hearty dishes such as game, braised meats or strong cheeses, without appearing rustic.

Our Cabernet Mitos vines are located on the Rheinhessen side of the estate, in Dalsheim and Monsheim.

The deep soils and the sheltered sites with south-eastern and southern exposure offer optimal conditions for this warmth-demanding grape variety. They ensure reliable ripening and the development of the intense colour and structure for which Cabernet Mitos is valued.

Origin of Cabernet Mitos

Red wine cuvée Fuchs «Exklusiv» dry with a Cabernet Mitos grape

Cabernet Mitos is a red grape variety bred at the State Teaching and Research Institute in Weinsberg and was approved for cultivation in 2001. It was originally assumed to be a cross between Blaufränkisch and Cabernet Sauvignon, as the wines show a clear stylistic resemblance to Cabernet Sauvignon.

Later DNA analyses revealed that the actual parent varieties are Blaufränkisch and Teinturier du Cher. The name Cabernet Mitos was nevertheless retained, as the wines continue to show a distinctly Cabernet-like style.

Characteristics of the Variety

With good winter hardiness, Cabernet Mitos nevertheless requires a warm climate and fertile soils. The berries of Cabernet Mitos grapes are very small, with a blue-black skin and deeply coloured red flesh and juice.

The variety ripens very late and regularly produces rather low yields at high levels of ripeness, often with slightly shrivelled, sun-concentrated berries, resulting in correspondingly high extract levels.

The high content of colour compounds and tannins makes Cabernet Mitos particularly valuable as a structure-building grape variety in cuvée winemaking.
