Grape Variety Cabernet Dorsa – Powerful, Harmonious

Cabernet Dorsa is a modern red wine grape variety that impresses particularly with its deep red colour, dense structure and pronounced tannins. Aromatically it is reminiscent of classic Cabernet varieties, yet shows an independent and powerful style.

This interesting variety was only approved for cultivation in 2004. We planted it immediately in spring 2004.

Cabernet Dorsa wines show a distinct “Cabernet Sauvignon note” with plenty of true red wine character – meaning balanced harmony, full body and impressive persistence.

We deliberately do not bottle Cabernet Dorsa as a single-varietal wine, but instead use it specifically as a backbone variety in several red wine cuvées, which you can find among our dry red wines. In combination with more fruit-driven red varieties, it provides depth, dark fruit, structure and backbone – qualities that give a cuvée stability and expression – while the other blending partners contribute the fruitier notes.

Red wine cuvées with a high proportion of Cabernet Dorsa are powerful and show a beautiful deep red colour and velvety, smooth density. The fruit nuances range between cherry and plum tones with ripe, pleasant tannins. The wines carry a clear Cabernet note. They are enjoyable companions to roasts and game dishes, cheese, ham and smoked specialities.

The red wine grape variety Cabernet Dorsa is part of the Cuvée J

Cabernet Dorsa is a modern red wine crossing developed at the State Teaching and Research Institute in Weinsberg in 1971. The parentage was originally given as Dornfelder x Cabernet Sauvignon. DNA analysis has since shown that the variety is in fact a crossing of Blaufränkisch x Dornfelder. The name, however, has been retained.

Characteristics of the Cabernet Dorsa Red Wine Variety

The variety has high demands on climate and soil. It thrives best on warm, deep and calcareous soils. It ripens late and can reach high must weights in favourable growing conditions.

One of its particular strengths is its good resistance to fungal diseases.

The small, blue-black berries with their fine bloom ripen late. In favourable weather conditions they can achieve very high must weights. The flesh and juice of the berries are pale, while the intensely dark-coloured skins provide the wine’s deep colour.

Aromatically, Cabernet Dorsa often shows notes of cherry and cassis along with fine tannins.
